To make 4 loaves of pretzel bread.
- Water - 568 grams
- yeast - 14 grams
- Flour - 1 Kilo
- sugar - 24 grams
- salt - 18 grams
- butter - 8 tablespoons
For boiling:
- 8 cups water
- 1/2 cup baking soda
Topping:
- 1 large egg yolk
- 1 tablespoon water
- coarse ( Kosher ) salt
- Rise for 1-2 hours
- split loaves
- start boiling water
- preheat oven to 450 F.
- when adding in baking soda add slowly as it will boil up
- place loaves in boiling water for 30 seconds
- wash with egg wash topping
- sprinkle salt on top
- bake for 15-20 minutes
Buns
- Each loaf can be split into 3 buns
Rolls:
- 8 rolls per loaf
