recipes:pretzel_bread

To make 4 loaves of pretzel bread.

  • Water - 568 grams
  • yeast - 14 grams
  • Flour - 1 Kilo
  • sugar - 24 grams
  • salt - 18 grams
  • butter - 8 tablespoons

For boiling:

  • 8 cups water
  • 1/2 cup baking soda

Topping:

  • 1 large egg yolk
  • 1 tablespoon water
  • coarse ( Kosher ) salt
  1. Rise for 1-2 hours
  2. split loaves
  3. start boiling water
  4. preheat oven to 450 F.
  5. when adding in baking soda add slowly as it will boil up
  6. place loaves in boiling water for 30 seconds
  7. wash with egg wash topping
  8. sprinkle salt on top
  9. bake for 15-20 minutes

Buns

  • Each loaf can be split into 3 buns

Rolls:

  • 8 rolls per loaf
