Water - 568 grams
yeast - 14 grams
Flour - 1 Kilo
sugar - 24 grams
salt - 18 grams
butter - 8 tablespoons
For boiling:
8 cups water
1/2 cup baking soda
Topping:
1 large egg yolk
1 tablespoon water
coarse ( Kosher ) salt
Rise for 1-2 hours
split loaves
start boiling water
preheat oven to 450 F.
when adding in baking soda add slowly as it will boil up
place loaves in boiling water for 30 seconds
wash with egg wash topping
sprinkle salt on top
bake for 15-20 minutes
